Sheet Pan Drumsticks

I’m not a big fan of drumsticks or dark meat in general, but these were pretty good. The potatoes were the star of the show; tender, buttery, and flavor packed.
Ingredients

- 8 chicken drumsticks
- 1 lb. Yukon gold potatoes
- 2 Tbps butter
- 1/2 lb. fresh green beans
- olive oil
- juice of 1 lemon
Spices
- oregano
- thyme
- garlic powder
- salt
- pepper
Method
- Preheat oven to 350° F.
- Dry chicken thighs, place in bowl.
- Coat chicken with olive oil. Season with salt, pepper, oregano, and garlic powder.
- Place chicken on one side of sheet pan.
- Wash potatoes and cut into in 1 inch pieces.
- Coat potatoes with olive oil. Season with salt, pepper, thyme, and lemon juice.
- Place potatoes on other side of sheet pan.
- Put in oven, set timer for 45 minutes.
- Trim green beans. Coat with oil olive. Season with salt, pepper, garlic powder.
- Cube butter and add to beans.
- Remove chicken and potatoes from oven. Separate chicken and potatoes, place green beans in space between chicken and potatoes.
- Return to oven for 20 more minutes.
Notes
- I originally guessed 375° F for the oven temperature, as it wasn’t called out in the video. Some of the potatoes were a little crispy and the drumsticks were a little dry. So, I think 350° F is probably better.
- My sheet pan wasn’t as big as the one in the video (its only 10" x 14") I put in my best guesses for chicken, potato, and green bean quantities and the seemed to work out ok.
- I’m guessing you could probably also use thighs in place of drumsticks.
